The best no-bake energy balls

If you're like us, we love snacks. Fruit, veggies, string cheese and nuts are great choices, but if you are looking for a new and healthy option, we recommend trying these energy balls. While we've been making energy balls for years, this recipe from Trader Joe's is the best one yet. We stuck to the recipe, but they would also be delicious with shredded coconut, dried berries or other additions. Easy, quick, healthy AND delicious. Clean-up was a breeze, and they took less than 10 minutes to make. We'll warn you though: These are extremely addicting. We bet you can't eat just one. We can't! We hope you enjoy these as much as we do!

Ingredients

  • 1 cup rolled oats

  • 1/2 cup chocolate chips

  • 1/2 cup ground flaxseed meal

  • 1/2 cup peanut butter

  • 1/2 cup honey or maple syrup (we used honey)

  • 1 tsp vanilla extract

Directions

Combine all ingredients together in a bowl; form into 1-inch balls using hands. Arrange bites on a baking sheet and freeze until set, about 1 hour. (Note: We recommend storing them in the freezer). Enjoy!
