Happy New Year! Hope everyone had a great Christmas and holiday season. 2022 flew by! We blinked and welcomed 2023. It is so hard to believe a new year is here! One of our goals this year is to be more consistent with our blog. With that being said we wanted to share a new soup recipe. It is so good and super easy. Every year during the holidays one of our dear friends gifts us with fresh sausage from his hometown. This year I was looking for a new recipe and this one was a winner! We will definitely be making this again this winter. It is full of veggies and flavor! Perfect for a cold day. Hope you enjoy this recipe as much as we did!

Ingredients
1 pound of spicy sausage (can use mild)
6 cups of chicken broth
12 ounces of your favorite pasta (we used shell)
1 small onion
3 garlic cloves
3 celery stalks (diced)
3 carrots (diced)
6 sweet mini peppers (sliced)
1 bag of baby spinach
1 can of diced tomatoes (undrained)
1 can of cannelini beans (drained & rinsed)
S & P to taste
Italian seasoning to taste
Red chili pepper flakes to taste
a few dashes of your favorite hot sauce, if desired
Directions
Brown sausage, drain and set aside. In in a large pot sauté diced onion, garlic, cherry peppers, carrots and celery until softened. Stir in broth, pasta, sausage, tomatoes, beans and spices to taste. Bring to a boil and then reduce to a simmer. Place lid on the pot and let pasta cook until softened. Stir in bag of fresh spinach and hot sauce. Serve with fresh parmesan cheese and enjoy!
